RECIPE FOR TODAY

More often than not, we all realise our style of cooking become monotonous. So much that we tend not even have apetite for what we cook. Especially in countries like Ghana, the major vegetables we all can find on our food market are white cabbages, green bell pepper, carrots, kontonmire, gboma, aderm3, chillie pepper, tomatoes, onions, garlic, shallots, spring onions and cucumber.

Are you wondering how to use these same vegetables but in a different way to get a different taste in cooking? Are you looking for new diet to add up to the stereotype food you have? Look no further. AJ is here to give you awesome simple but delicious recipes. 

Today's dish is for dinner or supper:
Pork-shrimps and potatoes 
Or
fish/4 boiled eggs/soft meat/chicken and potatoes. (Serving size for 4)

Cooking time: about 1:30minutes at least  to 3 hours depending your attention on regulating the fire.

INGREDIENTS
1 tablespoon oil (preferably olive oil)
1/4 teaspoon thyme (thyme is a spice easily found if you are even in Ghana)
1/4 teaspoon garlic powder or fresh garlic
3/4 teaspoon fresh chives or onions (chopped)
Salt and pepper to taste
2 pound meat, fish, chicken, pork or 4 eggs (half boiled and sliced)
Potatoes (any potatoes) 



  • Salt and pepper. Add the potatoes and toss in the pan for like a minute and take it of the fire.

  • 3. Rub your meat/pork/fish/eggs with another 1 teaspoon thyme, 1teaspoon garlic and onion. Sprinkle with pepper and salt to taste.

  • 4. If you are using oven, place the roast on a tack in a shallow toasting pan and cook for 50minutes at 350degrees.

  • If you are using any other means of fire, put the direction number 2 on fire at a low heat and add the pork/meat/chicken/eggs and cook until tender. 

  • 5. in the oven, arrange the potatoes around the roast and continue cooking until you know its cooked. But cook at 145degrees this time. Cover with foil.

  • If you are using any other means of fire, add the cooked potatoes to the directions on number 4 and cover with foil or fresh white napkin plus the cover of the pan. Lower the fire or take away coals if you are using  coal pot. Cook until tender, as desired.

You can add more onions, green pepper and chopped tomatoes to have a juicy taste. I did this and i loved it. 

  • Take the food off the oven or fire and let it settle for 15minutes before slicing the potatoes to serve.

  • Food is ready! Bon appetite!
